Ingredients

1 lb Mafaldine Pasta (Or Other Long Pasta)
-
2 Lobster tails (6-8 oz of meat)
- 1 Whole Shallot
- 5 Cloves Garlic (Minced)
- 2 Tbsp Butter
- 1 Tbsp Olive Oil
- 2 Tsp Onion Powder
- 2 Tsp Garlic Powder
- 1 Tsp Red Chili Flakes
- 1/2 Tsp Italian Seasoning
- 1 Tsp Paprika
- 2 Tsp Cajun Seasoning

Pinch Salt
- 2 Tbsp Tomato Paste

8-10 Sun Dried Cherry Tomatoes
- 1 Pint Heavy cream
- 1/2 Cup Chicken Stock
- 1 1/2 Cup Parmesan
-
Basil (to Taste)

Parmesan Cheese (To Taste)
Directions
Boil Lobster Tails in lightly salted Water. (4 to 6 minutes for 4-oz. lobsters and 8 to 10 minutes for 8-oz.) (Cook until internal 145F)
De-shell the lobsters once cooked. Roughly Chop the lobsters and set in the fridge until ready to serve into the pasta
In a Pan on Medium Low heat add butter and olive oil.
Add diced shallots and garlic into the pan followed by tomato paste and sauté together until the garlic and onions are fragrant and translucent. (1-2 Minutes)
Add Sun dried tomatoes or Cherry tomatoes with the seasonings listed above (taste as you go and adjust seasoning to your preference) Mix well.
Add Heavy creamy, Chicken stock/White wine, Fresh Parmesan cheese and mix together until well combined. Place on low heat constantly stirring.
Cook pasta according to package (Al dente)
Add cooked pasta into the sauce and introduce the lobster into the sauce as well. (The heat of the sauce will warm up the lobster)
Garnish with basil,Parmesan cheese and enjoy!!

I made this for my boa and I but used shrimp instead of lobster as my pocket book wasn’t deep enough for lobster and it was amazing. We all loved it and I shared the recipe with my parents.
