Jambalaya with chicken and andouille sausage is a flavorful Louisiana dish that combines spicy sausage, tender chicken, and aromatic vegetables with rice, all simmered together in a savory broth. It’s a hearty and satisfying one-pot meal that’s perfect for feeding a crowd or enjoying as a comforting dinner on a chilly evening.
Ingredients
- 1 Lb Andouille Sausage
- 1 White Onion Minced
- 5 Cloves Garlic
- 2 Bell Peppers
- 2 Celery Stalks
- 2 Tbsp Worcestershire
- 2 Tbsp Tomato Paste
- 2 Tbsp Butter

2 Cups Uncooked Jasmine Rice/Long Grain Rice
- 4 Cups Chicken Broth/Water
- 1 Tbsp Creole Seasoning
- 1 1/2 Lbs Chicken Thighs
- 1 Tsp Garlic Powder
- 1 Tsp Onion Powder
- 1 Tsp Paprika
- Pinch Salt
- 1/2 Tsp Red Chili Flakes
- 2 Tsp Cajun Seasoning

Directions
Slice Sausage and Chicken. Season the sliced chicken thighs until well coated.
Slice Onions, Celery, Garlic and Bell Peppers.
In a Medium high heat pan, Cook Sausage for 5-6 minutes until crispy then remove from pan then cook Chicken for 8-10 min or until it reaches an internal of 165F.
In a Pan add butter once melted add the vegetables (Holy Trinity) and sauté for 3-4 minutes on medium low until fragrant. Next add tomato paste and Worcestershire sauce.
Add the uncooked Rice and Chicken Broth. Reintroduce the chicken and Sausage into the pan and cook on a medium low with a lid for 20-30 Minutes.
Garnish with parsley/ Scallions. Serve and Enjoy!
