Ingredients
- Olive Oil
- 3 - 4 Lobster Tails
- 2 Celery Stalks (Cut)
- 2 Carrots (Cut)
- 1 whole Onion
- 5 cloves Garlic
- 4 Sprigs Thyme
- Lobster Shells and Veggies
- 2 Qts Water/Seafood Stock
- 2 Bay Leaves
- 3 Sprigs Thyme
- 1 stick Butter (Unsalted)
- 1 tbsp + 1 Tsp Lobster Base (Optional)
- 2 Carrots (Cut)
- 2 Celery Stalks (Cut)
- 4 cloves Garlic
- 1 whole Onion
- 2 tsp Cayenne Pepper
- 1 tsp Onion Powder
- 1 tsp Garlic Powder
- ¼ cup + 1 Tbsp Tomato Paste
- 4 tbsp Flour
- Lobster Stock
- ½ cup Heavy Cream
- Splash Cognac (Optional)
- Salt and Pepper

Steps
- Cook Veggies and Lobsters at 400F for 12 Minutes. Once done Remove the Lobster meat, chop it and set in the fridge.
- In a Pot add the Lobster Shells and veggies into a pot with Water or seafood stock. Add Bay leaves and thyme then bring to a boil then simmer for 15 minutes and strain.
- In the pot add butter and lobster base, season with cayenne pepper, onion powder and garlic powder. Chop Celery,Carrots,onion and garlic add to pot with tomato paste.
- Combine the tomato paste with the veggies and add flour. Add in the stock and cook until thickens. (15-20 Minutes medium low)
- Once thick use a blender/immersion blender and blend until smooth. Add Cognac/white wine (Optional) and chopped lobster meat.

This Lobster Bisque is amazing! I’ve made this two times. The second time, I changed the Cayenne pepper to only 1/4 tsp. and it was to Live for.
